Fresh Chickpea Salad

I’ve had numerous versions of this chickpea salad and decided it was time to make my own!

Ingredients

Instructions
  1. Soak the chickpeas overnight (minimum 12 hours)
  2. Boil the chickpeas until tender (approximately 45 minutes)
  3. Chop the onion, tomato, avocado and cucumber into small pieces. Place in separate bowl. Set aside.

  4. In a separate small bowl, whisk the olive oil and lemon juice together. Season with salt and pepper.
  5. Once chickpeas are cooked, set aside to cool then rinse with cold water. Place in a large bowl.
  6. Add onion, tomato, avocado and cucumber mixture to the chickpeas. Toss together.
  7. Pour the olive oil - lemon juice dressing to the salad mixture. Toss well.
  8. Crumble feta on top of the salad, toss gently, top with more feta cheese.
Recipe Notes

I will definitely try using canned chickpeas for this recipe next time and see if there is a difference in taste/quality. Soaking and cooking chickpeas really adds a lot of time to the process!

    Ok what is wrong with me. I love chickpeas but have never had them in a salad before?? So this would be a delicious first for me! It looks bright & lovely!

    Love chickpeas and they deserve more love. They are underrated for sure. I also love things with avocado, so this salad is a must-try.

    Oh I love Chickpeas! I eat them all the time. I make a salad similar to this one but I’ve never thought to add avocado?! Great idea! Definitely going to have to try this πŸ™‚
