Peanut butter is a staple item in our pantry. It’s an ingredient that is very versatile for any meal of the day. Even though the kids are not able to bring peanut butter snacks to school out of respect to those with severe allergies, my kids love PB &J sandwiches on a daily basis.

I was excited to try a new recipe with peanut butter as the main ingredient.  I typically use it when I’m making Thai chicken for dinner. However, you know me; I’m always up for a challenge!

The great thing about this particular recipe is that I used ingredients that are always in my house. I didn’t have to go out and purchase any additional items to create this snack.

All you need to make these tasty Coco-Raisin Peanut Butter Snack Bites are:

  • ½ cup Kraft Smooth Peanut Butter
  • 1 cup large flaked oats
  • ¼ cup honey
  • 2/3 cup organic coconut chips
  • 1/3 cup raisins
  • 1 Large mixing bowl
  • spoon and spatula

Put all of the ingredients in a bowl and mix well. Be prepared for your hands to get a lil messy!

Once you’ve mixed all of the ingredients, roll them into small balls (1 inch).

Place the balls in the refrigerator for 20-30 minutes to chill. I personally put them in the freezer for 10 minutes to get a quick chill then the fridge for 15 minutes.

This whole process took all of seven minutes to complete folks!

My 13 yr old daughter was impressed with how quick it was done as she’s the resident “baker” in the house. She loves the fact that it was done so quickly, we didn’t have to bake them and clean-up was a breeze! She’s already thinking of her own variations to make for herself!

I added the coconut chips for crunch and to balance out the nutty flavor. I love the idea of raisins to add a little sweetness. These Coco-Raisin Peanut Butter Snack Bites are the perfect blend of nutty, crunchy and chewy.
