This week’s challenge is all about fruits and vegetables. I need to add them to each and every meal or snack. An easy feat? Not always.

You can see that I am somewhat prepared and off to a good start:

For a busy mom of 3 who works full time, I think buying my fruits and veggies this way assists me in ensuring I reach my daily goals.

  1. I keep fruit visable on counter or table, veggies in baggies in fridge, lots of fruit and veggies in the smoothies, stews,soups, even in baked goods!

  2. making green juice has been amazing for me! it’s delicious and increases your daily veggie and fruit intake just like that!

  3. I keep a bowl of fruit out as well as serve some sort of veggie or fruit a few times a day via salads etc

  4. I find having them washed and cut in the fridge is the best way to fit in more fruits and veggies. The more convenient it is, the more likely I am to choose them over chocolate!

  5. Fresh fruit and veggies cut up and in containers or ziplock bags, easy to grab from fridge for a snack.

  6. I always have my fruits and veggies all washed and cut so they are ready to go. When the kids open the fridge, that’s the first thing they see.

  7. Adding fruits and veggies to other things helps out. Blueberries or bananas or strawberries to yogurt, cereal or pancakes. Adding diced up veggies to sauces so the kids do not even notice

  8. I hide them in yummy foods – I heard about brocolli muffins from a coworker and I want to try making them!

  9. My tip is to have fruits and veggies cut up and ready to eat in the fridge. I also like smoothies to get more fruits and veggies into your diet.

  10. I find it hard in the window. But we eat a lot of applesauce. And smoothies are well loved in my home.

  11. as vegetarian we have no problems eating these foods several times a day – mushroom omelette for breakfast, vegetable stir fry for dinner

  12. The best way I have found is to make sure there is always washed/prepped fruit & veggies in the fridge. If we can just grab them we are more likely to eat them.

  13. Put a bowl of apples, oranges, bananas, grapes, etc out so that family sees them and grabs them instead of other less healthy snacks. Keep cut-up fruits and veggies in fridge for easy snacking.

  14. I wash up a bunch of fruits and vegetables. I cut them up and put them into easy to grab bags for the kids. That way they are reaching for fruits and vegetables when they need a snack.
