Create A #DinnerIn15 Minutes with Schneiders

You just got in the door after a long day at work, the kids are yipping at you about their day, trying to show you all their stuff and your significant other is wondering what’s up for dinner. Sound familiar? This is my reality for the majority of the work week (some weekends too).

Perfect timing for a 15 minute dinner challenge!

Maple Leaf Foods and Schneiders already have a great collection of dinners you can create in 15 minutes on; however, rather than recreate one of their recipes, I decided to try and create my own!

Most of the ingredients I used in my #DinnerIn15 recipe are usually  on hand at home. I only had to pick up a few items, one of them being a Schneiders Country Naturals Smoked Ham (my featured item). Not only is this recipe a great meal but it’s versatile enough that if you reduce the quantities of some of the ingredients, it also makes a great side dish!

And well, you know me, I love making videos, so here’s a video of me putting this recipe together, totally impromptu, no script, just had fun with it!

Don’t think I’d leave you hanging folks, here’s the recipe for my Smoked Ham, Kale and Broccoli Pasta Salad:

Smoked Ham, Kale and Broccoli Pasta Salad

Prep Time 10 mins
Total Time 10 mins
Course Main Dish, Side Dish
Servings 4

  • 1 Smoked Ham 700g
  • 1 bunch kale medium
  • 1 crown broccoli large
  • 4 cups pasta rotini
  • 1 block cheddar cheese small
  • 1 cup dried cranberries
  • 1 cup raw pumpkin seeds
  • 3/4 cup poppyseed dressing

  • Boil the pasta until tender. Rinse under cool water. Set aside.
  • Cut up the kale and broccoli. Set aside.
  • Cut up the smoked ham into cubes.
  • Toss the ham, pasta, kale and broccoli together in a large salad bowl, adding poppyseed dressing as required.
  • Sprinkle dried cranberries and pumpkin seeds on top of the salad. Serve!

Stay tuned for more quick, fun and healthy #DinnerIn15 recipes from me in the next few weeks!

I’d love to hear from you if you try any of the recipes listed on  or even mine, come back and let me know how it went.

Til we eat again…
